I’ve got to be honest, I’ve never been a huge fan of quinoa-but this quinoa salad recipe is AHHHHMAZING! It’s seriously so good that I just found it last week and my husband has asked me to make it 2 more times since then!
Quinoa Salad Recipe
15 Ounce Can of Black Beans, rinsed and drained
1 Cup cooked Quinoa
1/2 Red Bell Pepper, Chopped
1 Mango, Chopped
Red Onion Chopped (amount depends on your taste-I use very little)
1 Jalapeno Pepper, Seeded and Finely Chopped
1/2 Cup Chopped Cilantro
1/3 Cup Lime Juice (Or Juice from one lime)
1 1/2 Tablespoons Extra Virgin Olive Oil
1 Garlic Clove, Minced
1/2 Tsp. Ground Cumin
1/2 Tsp. Chili Powder
1/4 Tsp. Ground Turmeric
1. Mix together the quinoa, black beans, bell pepper, mango, onion, cilantro, and jalapeno in a bowl.
2. Whisk together the lime juice, olive oil, garlic, cumin, chili powder, and turmeric in a separate bowl.
3. Drizzle over the mix and toss all together.
This Quinoa salad recipe is perfect as a side dish or as your main meal!
