Weight Watchers Appetizer Recipe: Mozzarella Sticks Recipe

Baked Mozzarella Sticks

If you are struggling with the craving for a rich cheesy snack here is a perfect substitute with half the calories of the traditional! Weight Watchers Appetizer Recipes can be perfect for playoff games or just because and these Baked Mozzarella Cheese Sticks take only moments to prepare.  The are a great mozzarella sticks recipe that will easily fix that fast food craving you are plagued with while trying to stay on your diet and healthy eating regimen. They don’t have the classic “crunch” you may be used to in the traditional fried variety but they pack tons of flavors and have the oozing cheese that we all love. Each whole cheese stick is only 2 Weight Watchers Points. Full of calcium, craving satisfying and rich in flavor this is the perfect treat!


Mozzarella Stick Ingredients
Low Fat Part Skin Mozzarella String Cheese Sticks
½ Cup Plain Bread Crumbs
½ Teaspoon Sage
½ Teaspoon Rosemary
½ Teaspoon Thyme
¼ Teaspoon Garlic Salt


  • Preheat oven to 400 degrees.

• Spray baking sheet with non-stick cooking spray
• In small bowl mix together bread crumbs and seasonings
• Cut string cheese sticks in half
• Dip each half cheese stick in water and then dip into bread crumb mixture
• Place on pre-sprayed baking sheet
• Bake cheese sticks at 400 degrees for 7 minutes or until just melted.
• Remove from heat and allow to cool
• Serve

8 ounce can Tomato Sauce
1 Teaspoon Oregano
1 Teaspoon Garlic Salt
• Mix all ingredients together in small bowl.
• Heat in microwave for 45 seconds or until heated through
• Serve with Baked Cheese sticks

These cheese sticks will not be crisp but will retain the flavor of the bread crumbs and cheese satisfying that craving you have. They are a bit messy to eat due to bread crumbs so you may prefer using a fork to cut them and dip in sauce if desired. At only 2 Weight Watchers Points for 2 Baked Mozzarella Cheese Sticks (equal to 1 string cheese stick), these are a quick and satisfying snack on your healthy eating journey.

Chocolate Beer Stout Cupcake Recipe With Homemade Irish Cream Icing

beer cupcakesI threw a big 40th Beer Bash Birthday party for my husband this weekend and these Chocolate beer stout cupcakes were a HIT!  I loved how super simple they were to make!    And don’t worry, you don’t actually taste the stout beer-it just makes them SUPER moist!

Chocolate Beer Stout Cupcakes With Homemade Irish Cream Icing

Cupcake Ingredients:

  • 1 Box Betty Crocker Devils Food Cake Mix
  • 1 1/4 Cups of Stout Beer (I used Guiness)
  • 1/2 Cup Olive Oil
  • 3 Eggs

Irish Cream Icing:

  • 4 Cups Powdered Sugar
  • 1/2 Cup Crisco Shortening
  • 1/2 Cup Softened Butter
  • 1 Teaspoon Vanilla
  • 4-5 Tablespoons of Irish Cream Liqueur
  • Chocolate Syrup


1.  Preheat oven to 350 and put cupcake liners in baking pan.
2.  Beat together cupcake ingredients in bowl on low speed for about 30 seconds and then medium speed until well blended.
3.  Divide batter into cupcake pan and bake 18-20 minutes or until done.
4.  In a big bow, beat butter and Crisco on low speed until mixed smooth.  Continue mixing and add powdered sugar one cup at a time.
5.  Continue beating while adding vanilla and Irish cream liqueur and mix until smooth.
6.  If you have a decorating bag and tip you can pipe the frosting on the cooled cupcakes or use a Ziploc bag with a whole cut in the corner.
7.  Drizzle with chocolate syrup.

These turned out amazing and people were grabbing 2 at a time so I was happy I doubled the recipe!  To save my waistline, I am sending in the extras to Chris’s work tomorrow!

Halloween Party Recipes: Halloween Dipped Pretzels

Everyone loves dipped pretzels but not many like the hassle of melting chocolate.  I have found a solution to this dilemma that everyone raves about.  In fact, I made these at the beginning of the school year last year and my son’s teacher requested them for every party for the remainder of the year!  The awesome thing about these Halloween Dipped Pretzels is that you can use this recipe for ANY holiday or occasion, just change the colors of the sprinkles and frosting!

Halloween Dipped Pretzels:

Pretzel Rods
Canned Frosting (your choice)
Sprinkles (to fit your holiday)

1.  Open frosting at room temperature (do NOT use refrigerated frosting, your pretzel will break).
2.  Dip pretzel in frosting and swirl until about half of it is covered.
3.  Cover frosting with sprinkles and enjoy!

How easy is that?  These literally take me less than 10 minutes to make an entire class set!

Halloween Party Recipe: Popcorn Jack-O-Lanterns

Looking for fun Halloween party recipes?  These Popcorn Jack-o-lanterns are IT!


Popcorn ( 2 bags popped)
Marshmallows (1 bag)
Food Coloring (to make orange)
Fruit Roll Up (1-2)
Butter (1 tablespoon)
Pretzel Sticks
Orange sprinkles

1.  Pop your popcorn and set aside.


2.  Melt butter in big pot on low heat.

3.  Add bag of marshmallows and stir until completely melted.

4.  Add food coloring to turn marshmallows mixture orange.


5. Pour popcorn into the marshmallows until you reach desired consistency.

6.  Form popcorn mixture into balls.

7.  Insert pretzel sticks into the balls for your pumpkin stem.

8.  Roll ball in orange sprinkles.

9.  Cut Fruit Roll Ups into desired jack o lantern face pieces.

Do It Yourself Restaurant Pizza!

We are huge fans of pizza at our house…personally I would eat it every single day if my size would allow it!  We frequently make our own from either homemade crust, or by buying dough balls from local stores.  But when a friend told me that they go to their favorite pizzaria and buy dough balls to make their own pizza, well, let’s just say I HAD to try it!  I was suprised that it cost the same thing as the dough balls we buy at the store…I really thought it would be more.  We got a dough ball that was able to make an 18 inch pizza for only $2.99. Since this size pizza normally costs $13.99, we saved quite a bit!

Do It Yourself Restaurant Pizza

Pizza Stone/Cooking Sheet
Restaurant Dough Ball
Your Desired Toppings

1.  Heat stone in oven at 375.
2.  Spread dough onto stone (using some flour helps with this).
3.  Add Sauce, Toppings, and Cheese.
4. Bake until it’s to your desired crispness and cheese is melted. *Note* When we buy store bought dough, we have to precook the dough before adding sauce and toppings.  We did NOT have to do this with the restaurant dough.
