Barbeque Chicken Quesadilla


Earlier this week I asked readers on my Facebook page if they had any ideas on what to do with a very large amount of leftover slow cooker beer bbq chicken.  All of the ideas sounded delicious but I just had to go with the barbeque chicken quesadilla idea!

Barbeque Chicken Quesadilla


BBQ Chicken ( see my slow cooker beer bbq chicken recipe)
2 Tortillas
Chedder and Mozzerella Cheese
Lettuce, Sour Cream, Salsa, and other desired toppings

1. Heat your skillet over medium heat until it warms.
2. Spray pan with non-stick spray and lay 1 tortilla down.
3.  Cover with a mix of cheese and allow to slightly melt.

4.  Add BBQ chicken and sprinkle more cheese.

5.  Lay other tortilla on top and then flip the whole quesadilla over.  Be sure to not let it “slap” down on the pan, the bbq chicken sauce will splatter!
6. Continue cooking and flipping until it reaches your desired color brown.
